Cochini Appam for Passover - Recipe by Ann Samson

Ingredients:

  • 1 packet broken matzah pieces
  • a bowl of water to soak matzah pieces
  • 6 eggs
  • 1/2 cup brown sugar
  • 1 cup silan (date molasses)
  • 1/2 cup oil
  • 1/4 teaspoon cardamom powder
  • 1/2 cup grated coconut (optional)
  • 1 1/2 cups raisins
  • 1 cup small walnut pieces, chopped very fine or ground
  • 1/2 cup water

 

Instructions:

  1. Preheat oven to 325 degrees.
  2. Grease a 9×13 dish.
  3. Beat eggs with brown sugar, silan, oil & cardamom powder in a large bowl.
  4. Mix in raisins, walnut pieces and grated coconut (if using).
  5. Soak matzah in water to soften, then drain and discard water.  Do not oversoak.
  6. Add matzah to egg mixture and mix very well so that all pieces are covered.
  7. Add 1/2 cup water and mix again.
  8. When thick, pour into dish.
  9. Bake for approximately 40 minutes, till it pulls away from the sides.
  10. Let cool slightly.
  11. Cut into diamonds.
  12. Serve warm.  Optionally add whipped cream.
