Almond Haystacks - Recipe by Ann Samson
Guilt Free Passover Cookies!

Ingredients:

  • 2 egg whites
  • 1/2 cup sugar
  • 3 cups sliced almonds
  • 1/2 cup almond extract

 

Instructions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl beat egg whites until soft and white.
  3. Add sugar gradually and keep beating.
  4. Add almond extract.
  5. Add sliced almonds and mix well.
  6. Using a teaspoon make small mounds of mixture on a parchment lined or Silpat lined cookie sheet.
  7. Bake cookies in oven for 20 minutes or until golden brown.
  8. Turn oven off and leave cookies in with door open for an additional 10 minutes.

 

Makes approximately 30 cookies.
